Well another very productive day here at The Cottage on the Hill, I ve don't lots of cutting, my ladies have done lots of sewing and we are well on our way to some more terrific projects being completed before the ladies leave me tomorrow afternoon.
I just wanted to share one of the recipes I made for morning tea this morning, a couple of the ladies in the group asked me if it was in my book "blackberry Jam and Cream" but it isn't so, here is the recipefor anyone who might like to try it. Very simple, but yum.
Passionfruit Slice
Base 1 cup self raising flour, 1 cup coconut, 1/2 cup castor sugar, 125g (4oz) melted butter, 1/2 teasp Vanilla
Topping 395g condensed milk, 1/4 cup lemon juice, pulp from 2 passionfruit
Combine flour, coconut, sugar, butter and vanilla in a bowl, mix well and press into a slice tin, place into a pre heated 180c oven. Bake for 15 minutes or until golden, allow to cool for 5 minutes.
Reduce the heat in the oven to 140c, Mix topping ingredients together, pour over base abd bake for a further 15 minutes, or until the edges go golden, allow to cool and cut into squares to serve.
Sorry I haven't a photo but it is all eaten.
Kerry
I've just made your slice, didn't have the patience to let it cool, it's yum!
Perfect use for the cheap passionfruit I got at a local farmers market- $2 for a whole bag!! (80 cents each at Coles!)
Thanks for the recipe, sure to use it again.

Hi Kerry,
My mum has made that slice ever since I can remember when I was a child. Now at our Monday evening group each time it is my turn to take supper all the ladies tell me to get my mum to make the Passionfruit slice for them so she has been making that for the past eight years for me they just love it. Regards Fee.

Sounds yummy Kerry, might have to try that one as the passionfruits are falling off the vine (with the help of the cockatoos)

Sounds lovely. I'll have to try that recipe. I've been meaning to let you know I've completed a quilt from your book for my niece. I'll send photos sometime. I'll be in touch soon

That does sound gorgeous!!
I blogged my Ted for you. He didn't do well LOL (One woman asked how I had made him look so old (admittledly he is about 10 years old at least!). I don't think she believed I made him. Perhaps that's why he was passed over!)
