This morning when I was cooking for this weekends retreat I decide to experiment with a cake I had been wanting to make for a few weeks - A Gluten free Pear Cake - well this is how it turned out and it was yummy - so I thought I would share the recipe with anyone who would like to make it .
6 x green pears - peel and cook in a bowl in the mircowave for 5 minutes or until tender.
1 small tube of natural yogurt - ( if you are like me that can be lactose free as well)
1 and 1/2" cups of gluten free flour
2 teaspoons baking powder
1 cup almond meal
1/2 teaspoon cinnimon
1 cup freshly squeezed orange juice
1/2 cup caster sugar
After you have cooked the pears, arrange them in a pre greased spring form tin
In a bowl mix together all other ingredients, pour into the tin and cook in a moderate oven for 35 to 40 minutes or until cooked when tested.
Sprinkle with icing sugar and enjoy
